Lefse-the Norwegian Flatbread

Tired of pancakes or breakfast burritos? Perhaps a lefse flatbread can be your food of choice. Traditionally, this Norwegian culinary delight is made from potatoes, milk or cream or possibly lard and flour and cooked on a griddle. Special tools are used to roll out lefse dough leaving deep grooves. This soft flatbread can then be embellished with numerous fillings including cinnamon and sugar, jelly or peanut butter and sugar. If a sweet taste is not what you are after, feel free to fill your lefse with ham and eggs or even beef. Your imagination is the only limitation on what can go inside of this versatile and delicious dish.
